Preparation
  1. In a bowl, combine 1 cup all-purpose flour, 2 teaspoons baking powder, and 1 teaspoon salt. Whisk until evenly combined.
  2. In a food processor, blend 1 cup cottage cheese until smooth.
  3. Pour the blended cottage cheese into the bowl with the dry ingredients. Mix with a fork until a shaggy dough begins to form, then use your hands to knead it gently until smooth (about 2-3 minutes).
  4. If the dough is too sticky, dust with a little more flour while kneading until it reaches a manageable consistency.
  5. Lightly dust your workspace and dough with flour, roll out to your desired thickness (about ¼ inch).
  6. Transfer the rolled-out dough to a baking sheet lined with parchment paper or lightly greased pizza stone.
Baking
  1. Brush the top of the dough with olive oil and pre-bake in a preheated oven at 450°F (230°C) for 10 minutes.
  2. Add your desired toppings and return to the oven for an additional 5-7 minutes until the cheese is melted and bubbly. Broil for 1-2 minutes for an extra crispy finish if desired.

Notes

Store leftovers in an airtight container for up to 2 days at room temperature, a week in the fridge, or freeze for up to three months. Wrap tightly and thaw overnight in the fridge.
