  • 1 cup cottage cheese Blended until smooth; use whole-fat for extra creaminess.

Preparation
  1. In a medium-sized bowl, add 1 cup of all-purpose flour, 2 teaspoons of baking powder, and 1 teaspoon of salt. Whisk together until well combined.
  2. In a food processor, add 1 cup of cottage cheese and blend until it’s silky smooth.
  3. Pour the blended cottage cheese into the bowl with dry ingredients. Using a fork, mix until a shaggy dough begins to form. Then, switch to your hands and knead gently until a smooth dough forms.
  4. Cut the dough into four equal pieces and shape each into a ball.
  5. Using a rolling pin, flatten each ball into a circle about 6-7 inches in diameter.
  6. Heat a non-stick pan over medium-high heat. Place a rolled-out pita on the pan. Cook for about 1-2 minutes until bubbly and golden brown, then flip it over and repeat.
  7. Transfer your cooked pitas to a plate and cover with a clean kitchen towel to keep them warm.

Notes

Use room-temperature cottage cheese for smoother incorporation. Common mistake: Don’t skip the blending of cottage cheese; it’s vital for texture.
