Ingredients
  

Bagel Base
  • 1 cup all-purpose flour (plus more for dusting) Consider using a good-quality all-purpose flour, like King Arthur, for the best texture.
  • 2 teaspoons baking powder Works as the leavening agent to give those bagels their wonderful rise.
  • 1 teaspoon salt A must for flavor enhancement! I recommend sea salt.
  • 1 cup cottage cheese, blended Use a creamy and not too watery cottage cheese like Daisy brand.
  • 1/2 medium egg egg, beaten Adds a golden color when brushed on top.
Optional Toppings
  • to taste sesame seeds or everything but bagel seasoning Enhances flavor and presentation.

Method
 

Preparation
  1. In a bowl, add the flour, baking powder, and salt. Mix well.
  2. In a food processor, add the cottage cheese and blend until smooth—about 30 seconds.
  3. Combine the blended cottage cheese with the dry ingredients and mix until a smooth dough forms. If the dough is too sticky, dust with a little more flour.
  4. Divide the dough into 4 equal pieces, roll each piece into a ball, and poke a hole in the middle to form a bagel shape.
  5. Gently stretch each bagel shape, dusting with flour if necessary.
  6. Brush the tops and sides of each bagel with the beaten egg, then sprinkle with sesame seeds or seasoning, if desired.
Cooking
  1. Air-fry at 300°F for 13 minutes or until golden.
  2. Alternatively, bake in the oven at 375°F for about 25 minutes. Check for a golden crust before pulling them out.

Notes

These bagels are best enjoyed fresh but can be stored in an airtight container at room temperature for 2 days. Freeze them for up to a month for longer storage. You can prepare the dough up to 24 hours in advance and then bake or air-fry them fresh.
