Preparation
- Chill the can of coconut milk overnight in the fridge.
- Scoop out the solid coconut cream into a mixing bowl, leaving the liquid behind.
- Add sweetener and vanilla extract to the bowl.
- Beat the mixture with a hand mixer until light and fluffy, about 2-4 minutes.
Serving
- Serve immediately or store in the fridge for up to 4-5 days.
Notes
Store in an airtight container in the refrigerator. Re-whip before serving as it may settle. For variations, try adding spices or flavor extracts.
