Preparation
  1. Preheat your oven to 160°C (350°F).
  2. Grease a mini muffin tray with coconut oil or spray.
  3. In a large bowl, whisk together eggs, applesauce, maple syrup, and vanilla extract until well combined.
  4. Sift in the coconut flour, cinnamon, and baking powder; mix until well blended.
  5. Fill 16 mini muffin holes with batter until they are about 3/4 full.
  6. Bake in the oven for about 15 minutes until they spring back to the touch and turn lightly golden.
Glazing
  1. While the donuts bake, prepare the cinnamon sugar glaze by combining coconut sugar and cinnamon in a small bowl.
  2. Once baked, let the donut holes cool for a few minutes, then dip them into the cinnamon sugar mixture or dust with powdered sugar.

Notes

Always choose high-quality ingredients for the best results. If you're in a pinch, unsweetened mashed bananas can replace the applesauce. Make sure to measure the coconut flour correctly, as it's much denser than regular flour.
