  • 2 cups frosted circus animal cookies, coarsely chopped These are the star of this dessert!
  • 1 cup mini marshmallows Adds a chewy texture that balances well with the crunchy cookies.
  • 2 tablespoons rainbow nonpareils For that adorable pop of color.

Preparation
  1. Take your cream cheese out ahead of time to soften.
  2. In a large bowl, beat the softened cream cheese and confectioners' sugar using a hand mixer on medium speed until smooth and creamy—about 2 minutes.
  3. Add in the vanilla extract and beat just until combined—another 30 seconds.
  4. Gently fold in the thawed whipped topping with a spatula until well combined.
  5. Fold in your chopped circus animal cookies and mini marshmallows carefully to keep cookies whole for texture.
  6. Fold in the rainbow nonpareils and serve immediately or refrigerate for about 30 minutes.
  7. Add extra cookies on top for presentation before serving.

Notes

Keep leftovers in an airtight container in the fridge. You can make it a day ahead; just don't add garnishes until serving. Consider using gluten-free cookies for a gluten-free version.
