For the cheesecake filling

Method
 

Preparation
  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Spray a 9×13-inch baking dish generously with cooking spray.
  3. In a medium bowl, combine the softened cream cheese, 1 cup of granulated sugar, the egg yolk, and vanilla extract. Use a hand mixer to blend until smooth and creamy.
  4. Roll out one tube of the crescent rolls in the prepared baking dish, pressing the seams together.
  5. Carefully spread the cream cheese filling evenly over the crescent roll layer.
  6. Roll out the second tube of crescent rolls over the cream cheese layer and press the seams together.
  7. In a small bowl, beat the egg white until frothy, then brush over the top layer.
  8. In another small bowl, mix the remaining 1/2 cup of granulated sugar with the cinnamon and sprinkle it over the egg wash.
Baking
  1. Bake in the preheated oven for 25-30 minutes until the top is golden brown.
  2. Let the bars cool in the baking dish for about 30 minutes, then refrigerate for at least 2 hours before slicing.
  3. Slice into squares and serve.

Notes

These bars can be made a day in advance and stored in the refrigerator. They also freeze well for up to 3 months.
