  • 400 ml canned full-fat coconut milk For a rich and creamy texture. Opt for high-quality brands like Thai Kitchen or Aroy-D.
  • 50 grams chia seeds Packed with fiber and omega-3 fatty acids, they add delightful texture.
  • 60 ml maple syrup or honey Sweeten your mousse naturally; pure maple syrup provides depth of flavor.
  • 25 grams cocoa powder Choose unsweetened cocoa for a rich chocolate flavor—Cacao Barry or Ghirardelli are fantastic choices.
  • 1 teaspoon pure vanilla extract Adds warmth and depth; go for pure extract.
For serving
  • to taste coconut whipped cream A light, fluffy touch to balance the richness.
  • to taste fresh berries Strawberries, raspberries, or blueberries are excellent garnishes.

Preparation
  1. Add the coconut milk, chia seeds, maple syrup, cocoa powder, and vanilla extract to a high-powered blender. Blend on high speed until smooth—about 30 seconds.
  2. Immediately transfer the mousse mixture to a bowl, cover it, and refrigerate for about 2 hours. The chia seeds will absorb liquid and create a thick, mousse-like consistency.
Serving
  1. Once set, divide the mousse equally between three glasses or small bowls. Serve chilled, topped with coconut whipped cream and fresh berries.

Notes

Ensure your coconut milk is at room temperature for easier blending. You can prepare this mousse up to 5 days in advance. It stores well in the refrigerator.
