- Add the coconut milk, chia seeds, maple syrup, cocoa powder, and vanilla extract to a high-powered blender. Blend on high speed until smooth—about 30 seconds.
- Immediately transfer the mousse mixture to a bowl, cover it, and refrigerate for about 2 hours. The chia seeds will absorb liquid and create a thick, mousse-like consistency.
Serving
- Once set, divide the mousse equally between three glasses or small bowls. Serve chilled, topped with coconut whipped cream and fresh berries.
Notes
Ensure your coconut milk is at room temperature for easier blending. You can prepare this mousse up to 5 days in advance. It stores well in the refrigerator.
