Preparation
- Preheat the grill to medium-high heat.
- Season the chicken breasts with salt, pepper, and your choice of spices.
- Grill the chicken for about 6-8 minutes on each side until fully cooked.
- Remove from the grill and let rest for a few minutes.
Assembly
- In the center of each tortilla, layer the cooked rice, black beans, diced tomatoes, shredded lettuce, corn, and sliced grilled chicken.
- Drizzle chipotle ranch dressing over the fillings.
- Fold in the sides of the tortilla and roll it up tightly from the bottom.
- Serve immediately with additional dressing on the side.
Notes
For a healthier option, consider adding avocado, using quinoa instead of rice, or choose a spinach tortilla for extra nutrients. These burritos are also great for meal prep and can be stored in the fridge for up to 4 days.
