Main Ingredients
  • 2 pieces Chicken Breasts seasoned
  • 1 cup Cooked Rice I recommend jasmine for its fragrance
  • 1 cup Black Beans drained and rinsed
  • 1 cup Diced Tomatoes
  • 1 cup Shredded Lettuce
  • 1/2 cup Corn
  • 1/4 cup Chipotle Ranch Dressing
  • 4 pieces Large Tortillas
  • Salt & Pepper To taste
  • Olive Oil For grilling

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with salt, pepper, and your choice of spices.
  3. Grill the chicken for about 6-8 minutes on each side until fully cooked.
  4. Remove from the grill and let rest for a few minutes.
Assembly
  1. In the center of each tortilla, layer the cooked rice, black beans, diced tomatoes, shredded lettuce, corn, and sliced grilled chicken.
  2. Drizzle chipotle ranch dressing over the fillings.
  3. Fold in the sides of the tortilla and roll it up tightly from the bottom.
  4. Serve immediately with additional dressing on the side.

Notes

For a healthier option, consider adding avocado, using quinoa instead of rice, or choose a spinach tortilla for extra nutrients. These burritos are also great for meal prep and can be stored in the fridge for up to 4 days.
