Preparation
  1. In a large pot over medium-high heat, drizzle in the olive oil.
  2. Add the ground beef and cook for about 3-4 minutes, breaking it up with a wooden spoon until browned.
  3. Stir in the diced onion, cumin, and garlic powder until fragrant (about 2 minutes).
  4. Add the chopped cabbage, canned tomatoes, uncooked rice, chipotle sauce, and salt, and pour in a cup of water.
  5. Bring to a gentle simmer, cover, and cook on low for 35-40 minutes, stirring every 10 minutes.
  6. Taste and adjust seasoning if needed, then serve topped with optional toppings.

Notes

Store leftovers in an airtight container for up to 4 days or freeze in serving portions for up to 3 months. Adjust chipotle sauce based on heat preference.
