Preparation
- Begin by slicing the garlic crosswise into about 2 mm thick pieces.
- Chop the Thai chilies into pieces around 3 mm thick, removing the seeds if you want to reduce the heat.
- Pour the fish sauce into a small bowl as a base.
- Sprinkle the granulated sugar into the bowl and stir until it fully dissolves.
- Add the sliced garlic, chopped chilies, lime juice, and lime slices to the bowl. Mix until combined.
- Let the mixture sit for at least 10 minutes for the flavors to meld.
Notes
Store the condiment in a sealed container in the fridge for up to 2 weeks. For best flavor, prepare it 24 hours in advance.
