  • 6 pieces Thai chilies 3 red, 3 green; adjust depending on your heat preference.
  • 2 slices lime Optional, for extra zest.
  • 4 tablespoons fish sauce Look for a high-quality brand like Red Boat or 3 Crabs.
  • 2 teaspoons granulated sugar This balances out the saltiness; consider palm sugar for a more authentic taste.
  • 1 tablespoon lime juice Freshly squeezed for bright acidity.

Method
 

Preparation
  1. Begin by slicing the garlic crosswise into about 2 mm thick pieces.
  2. Chop the Thai chilies into pieces around 3 mm thick, removing the seeds if you want to reduce the heat.
  3. Pour the fish sauce into a small bowl as a base.
  4. Sprinkle the granulated sugar into the bowl and stir until it fully dissolves.
  5. Add the sliced garlic, chopped chilies, lime juice, and lime slices to the bowl. Mix until combined.
  6. Let the mixture sit for at least 10 minutes for the flavors to meld.

Notes

Store the condiment in a sealed container in the fridge for up to 2 weeks. For best flavor, prepare it 24 hours in advance.
