  • 1 cup breaded chicken breast, cooked and sliced Use cooked chicken for a quicker option; leftover rotisserie chicken works wonderfully here.
  • 1/2 cup cottage cheese Full-fat cottage cheese is recommended for creaminess.
  • 1/2 cup marinara sauce Homemade or store-bought.
  • 1/4 cup shredded mozzarella cheese Fresh mozzarella recommended.
  • 2 tablespoons grated Parmesan cheese Adds authentic Italian flavor.
  • to taste fresh basil leaves For garnish.

Method
 

Preparation
  1. In a serving bowl, layer 1/2 cup of cottage cheese at the bottom.
  2. Add 1 cup of sliced, cooked breaded chicken breast on top of the cottage cheese.
  3. Spoon 1/2 cup of marinara sauce evenly over the chicken.
  4. Sprinkle 1/4 cup of mozzarella cheese and 2 tablespoons of grated Parmesan cheese on top.
  5. Garnish with freshly chopped basil leaves. Optionally, broil for 2 minutes until the top is melted and golden.

Notes

Leftovers can be stored in the fridge for up to 3 days. To maintain texture, layer ingredients separately if freezing.
