  • 4 pieces boneless, skinless chicken breasts or thighs Go for organic or free-range for the best flavor.
  • Salt and pepper, to taste
  • 1 tsp Italian seasoning Homemade blends can provide a more authentic taste!
  • 1 tbsp olive oil Extra virgin will add a lovely depth.
  • 1 tbsp butter Use unsalted for perfect seasoning control.
  • 2-3 cloves garlic, minced Fresh garlic is key here; don’t skimp!
  • 1/2 cup chicken broth Homemade is best, but store-bought works too.
  • 1/2 cup heavy cream (or half-and-half) For a lighter version, use Greek yogurt or a dairy-free alternative.
  • 1/2 cup grated Parmesan cheese Freshly grated will melt better than pre-packaged.
  • 6 cups fresh spinach You really can’t overdo it with spinach!

Method
 

Preparation
  1. Start by seasoning your chicken generously with salt, pepper, and Italian seasoning. Let it sit for about 10 minutes to absorb the flavors.
  2. In a large skillet, heat the olive oil and butter over medium heat until shimmering.
  3. Add the chicken and sear for 4-5 minutes on each side, or until golden brown and cooked through (internal temperature of 165°F). Remove and set aside.
  4. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  5. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
  6. Stir in the heavy cream and Parmesan cheese until the mixture is smooth and creamy.
  7. Add the fresh spinach gradually and cook until just wilted.
  8. Return the chicken to the skillet, spooning the sauce over the top. Allow it to simmer for another 5 minutes.
  9. Serve hot over rice, pasta, or with a side of crusty bread to soak up the sauce.

Notes

For a vibrant finish, consider adding a squeeze of lemon juice before serving.
