Preparation
- Start by seasoning your chicken generously with salt, pepper, and Italian seasoning. Let it sit for about 10 minutes to absorb the flavors.
- In a large skillet, heat the olive oil and butter over medium heat until shimmering.
- Add the chicken and sear for 4-5 minutes on each side, or until golden brown and cooked through (internal temperature of 165°F). Remove and set aside.
- In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
- Stir in the heavy cream and Parmesan cheese until the mixture is smooth and creamy.
- Add the fresh spinach gradually and cook until just wilted.
- Return the chicken to the skillet, spooning the sauce over the top. Allow it to simmer for another 5 minutes.
- Serve hot over rice, pasta, or with a side of crusty bread to soak up the sauce.
