For the Sauce

  • 1 cup heavy cream Full-fat cream gives the sauce its luscious texture.
  • 1 cup grated Parmesan cheese Grate your cheese fresh from a block for the best melting properties.
  • 1 teaspoon red pepper flakes Adjust to taste for desired spice level.
  • 2 tablespoons olive oil Extra virgin olive oil adds authenticity.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) and prepare fries according to package instructions if using frozen.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  3. Season the chicken fillets generously with salt and pepper.
Cooking
  1. Cook the chicken for 6–7 minutes on each side until golden brown and fully cooked through. Remove the chicken and set aside.
  2. In the same skillet, reduce the heat to low and add the minced garlic, sautéing for about 1 minute until fragrant.
  3. Add the heavy cream and bring it to a gentle simmer.
  4. Stir in the freshly grated Parmesan cheese and red pepper flakes. Let the sauce cook for an additional 2-3 minutes until it slightly thickens.
  5. Return the cooked chicken to the skillet, spooning the sauce over each fillet, and let them simmer for another 2-3 minutes.
  6. Serve the chicken on a plate, drizzled with the sauce, alongside the crispy fries and garnished with freshly chopped parsley.

Notes

Avoid overcooking the garlic to prevent bitterness. Make the sauce ahead of time and reheat gently for better texture. Store leftovers in an airtight container in the fridge for up to 3 days.
