  • 8 oz Chow mein noodles (fresh or dried) Consider using fresh noodles for a velvety texture.
Protein
  • 1 lb Tender chicken breast, sliced Boneless, skinless thighs can be used for more juiciness.
Vegetables
  • 1 cup Bell peppers, julienned
  • 1 cup Carrots, thinly sliced
  • 1 cup Bean sprouts
Sauces
  • 3 tbsp Soy sauce For saltiness.
  • 2 tbsp Oyster sauce For body and richness.
Aromatics
  • 2 cloves Garlic, minced
  • 1 inch Fresh ginger, minced
Cooking Essentials
  • 2 tbsp Sesame oil For stir-frying.
  • 2 stalks Green onions, sliced For garnish.

  1. Bring a large pot of salted water to a boil. Add chow mein noodles and cook according to package instructions. Drain and set aside.
  2. In a large wok, heat 2 tablespoons of sesame oil over medium-high heat. Add minced garlic and ginger, stirring until fragrant—about 30 seconds.
  3. Add the sliced chicken to the wok. Stir-fry until browned, around 5-6 minutes.
  4. Toss in the julienned bell peppers, thinly sliced carrots, and bean sprouts. Stir-fry for an additional 2-3 minutes, just until the vegetables are vibrant and slightly tender.
  5. Add the cooked noodles, soy sauce, and oyster sauce. Toss everything together, ensuring an even coat of sauce.
  6. Continue to stir-fry for an additional 2-3 minutes until everything is heated through.
  7. Garnish with freshly sliced green onions before serving.

Notes

Serve in a large bowl with chilled green tea or crisp white wine. You can customize with more vegetables or different proteins as desired.
