Preparation
- In a Zip-loc bag, rub the chicken breasts with olive oil, salt, pepper, and parsley. Let it marinate in the fridge for at least 30 minutes.
- In a small saucepan, add fresh lemon juice and simmer over medium heat for about 10 minutes until reduced slightly.
- Stir in 2 tablespoons butter into the lemon juice mixture until melted. Add half the chopped basil, reduce the heat, and keep the mixture warm.
- In a skillet over medium-high heat, melt 2 tablespoons butter. Sauté the minced garlic and onion until translucent, about 3-4 minutes.
Cooking
- Move the sautéed onions to the side of the skillet. Add the marinated chicken breasts, cooking them for about 8 minutes on each side or until they reach an internal temperature of 165°F (74°C).
- Once cooked, top the chicken with goat cheese and sun-dried tomatoes, then drizzle over the lemon-basil butter sauce.
