Ingredients

Main Ingredients
  • 4 pieces boneless skinless chicken breasts Opt for organic if possible, for the best flavor and quality.
  • 2 tablespoons olive oil A good-quality extra virgin olive oil can make all the difference.
  • 2 tablespoons butter Use unsalted for cooking to control salt levels.
  • 2 cloves garlic, minced Fresh garlic adds a punch of flavor; dried won’t have the same kick.
  • 1 small yellow onion, minced Sweet onions caramelize beautifully and enhance the overall taste.
  • 6 pieces sun-dried tomatoes, chopped Choose packed in oil for richness, or try dry ones for a bolder flavor.
  • 3 ounces goat cheese Provides a tartness; can be substituted with cream cheese.
  • to taste salt, pepper, and parsley Fresh parsley adds brightness.
  • 2 tablespoons fresh lemon juice Fresh squeezed, not bottled, for vibrant flavor.
  • 6-8 leaves fresh basil, chopped Transforms the dish with its fragrant quality.
  • 6 tablespoons butter Room temperature butter allows for better emulsification into the sauce.

Method

Preparation
  1. In a Zip-loc bag, rub the chicken breasts with olive oil, salt, pepper, and parsley. Let it marinate in the fridge for at least 30 minutes.
  2. In a small saucepan, add fresh lemon juice and simmer over medium heat for about 10 minutes until reduced slightly.
  3. Stir in 2 tablespoons butter into the lemon juice mixture until melted. Add half the chopped basil, reduce the heat, and keep the mixture warm.
  4. In a skillet over medium-high heat, melt 2 tablespoons butter. Sauté the minced garlic and onion until translucent, about 3-4 minutes.
Cooking
  1. Move the sautéed onions to the side of the skillet. Add the marinated chicken breasts, cooking them for about 8 minutes on each side or until they reach an internal temperature of 165°F (74°C).
  2. Once cooked, top the chicken with goat cheese and sun-dried tomatoes, then drizzle over the lemon-basil butter sauce.
Serving
  1. Finish with the remaining chopped basil and serve warm, savoring each mouthful of this delightful Comfort Food!
