Main ingredients
  • 1 lb boneless, skinless chicken breasts (or chicken thighs) Fresh chicken will yield the best flavor and texture.
  • 1 box Red Lobster Cheddar Bay Biscuit mix The hero of our dish, creating the signature, cheesy biscuit topping.
  • 3/4 cup water Ensure your water is at room temperature to mix well with the biscuit mix.
  • 1/2 cup shredded cheddar cheese Preferably freshly grated, as it melts better.
  • 1/2 cup chopped green onions Adds freshness and brightness to the dish.
  • 1 cup marinara sauce Your favorite variety with plenty of herbs is recommended.
  • 1/2 cup melted butter Use unsalted butter for better flavor control.
  • 1 packet Cheddar Bay Biscuit seasoning This brings all the flavors together.
Optional garnish
  • to taste chopped fresh parsley or extra green onions For garnish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and spray a 9×13-inch baking dish with non-stick cooking spray.
  2. Heat a skillet over medium heat and sauté the chicken breasts for about 8 minutes, or until fully cooked and no longer pink inside.
  3. In a medium bowl, mix the Cheddar Bay Biscuit mix with 3/4 cup of water, shredded cheddar cheese, and chopped green onion until well combined.
  4. Spread the marinara sauce evenly on the bottom of the prepared baking dish.
  5. Place the fully cooked chicken breasts over the marinara.
  6. Spoon the biscuit batter over the chicken, spreading it to cover each piece evenly.
Baking
  1. Place the dish in the preheated oven and bake uncovered for about 25 minutes or until the biscuit topping is golden brown.
  2. In a small bowl, combine melted butter and the included seasoning packet. Brush this mixture over the hot biscuit topping right after baking.
Serving
  1. Let the dish rest for 5–10 minutes before serving. Garnish with extra green onions or parsley if desired.

Notes

Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven for best texture.
