  • 1.5 cups canned apple pie filling Homemade filling can be used for an extra touch.
  • 16 ounces cream cheese, room temperature Philadelphia brand is recommended for creaminess.
  • 0.5 cups sugar
  • 0.25 teaspoon vanilla extract Real vanilla enhances the flavor.
  • 2 large eggs, room temperature
  • 0.25 cups caramel topping Can be store-bought or homemade.
  • 0.5 cups apple pie filling, for topping (optional)

Method
 

Preparation
  1. Begin by preheating your oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, combine the crushed graham crackers and melted butter. Press this mixture into the bottom of a prepared 7-inch springform pan.
  3. Spoon the apple pie filling into the crust.
Making the Cheesecake
  1. In a large mixing bowl, whip the room temperature cream cheese until fluffy, about 2-3 minutes.
  2. Add the sugar, vanilla, and eggs, mixing until smooth.
  3. Pour this mixture over the apple pie filling.
  4. Bake in the preheated oven for about 50-55 minutes until the center is set but slightly jiggly.
  5. Let the cheesecake cool to room temperature.
Topping and Serving
  1. In a small saucepan, combine additional apple pie filling and caramel topping over medium heat, just until warm.
  2. Spoon the apple caramel mixture over the top of your cooled cheesecake.
  3. Refrigerate until ready to serve, preferably a few hours.

Notes

For best results, use room temperature ingredients and consider garnishing with whipped cream and a sprinkle of cinnamon.
