Preparation
- Begin by preheating your oven to 350 degrees F (175 degrees C).
- In a medium bowl, combine the crushed graham crackers and melted butter. Press this mixture into the bottom of a prepared 7-inch springform pan.
- Spoon the apple pie filling into the crust.
Making the Cheesecake
- In a large mixing bowl, whip the room temperature cream cheese until fluffy, about 2-3 minutes.
- Add the sugar, vanilla, and eggs, mixing until smooth.
- Pour this mixture over the apple pie filling.
- Bake in the preheated oven for about 50-55 minutes until the center is set but slightly jiggly.
- Let the cheesecake cool to room temperature.
Topping and Serving
- In a small saucepan, combine additional apple pie filling and caramel topping over medium heat, just until warm.
- Spoon the apple caramel mixture over the top of your cooled cheesecake.
- Refrigerate until ready to serve, preferably a few hours.
