Dry Ingredients
  • 1.5 cups all-purpose flour Can substitute with whole wheat flour for a nuttier flavor.
  • 2 cups old-fashioned oats Rolled oats provide structure and texture; steel-cut oats are not recommended.
  • 0.5 teaspoon baking soda Helps the bars rise slightly.
  • 0.5 teaspoon baking powder For that perfect fluffy texture.
  • 0.5 teaspoon kosher salt Balances the sweetness.
Wet Ingredients
  • 0.5 cups unsalted butter, room temperature If using salted butter, reduce added salt.
  • 1 cup light brown sugar, packed Adds a caramel-like flavor.
  • 2 large eggs, room temperature Provides structure and moisture.
  • 1 tablespoon molasses Enhances the deep flavor; can be omitted.
  • 1 teaspoon vanilla extract A must for flavor depth!
Additions
  • 2 cups butterscotch chips, divided 1 1/2 cups for the batter, 1/2 cup for topping.
  • butterscotch sauce, for topping (optional) Takes the indulgence up a notch.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9x13-inch baking dish with baking spray.
  3. In a large mixing bowl, combine flour, oats, baking soda, baking powder, and salt. Stir and set aside.
  4. In a stand mixer, cream together butter and brown sugar on low until smooth, about 2-3 minutes.
  5. Add eggs, molasses, and vanilla, mixing until blended.
  6. Gradually add the dry mixture, mixing on low until just combined.
  7. Fold in 1 1/2 cups of butterscotch chips.
  8. Press the mixture evenly into the prepared baking dish and sprinkle the remaining 1/2 cup of butterscotch chips on top.
Baking
  1. Bake for 25-30 minutes until golden brown and a toothpick comes out with a few crumbs.
  2. Let cool for at least 10 minutes, then drizzle with butterscotch sauce if desired, cut into squares, and serve.

Notes

Store bars in an airtight container for up to 4-5 days. Refrigeration extends shelf life but may change texture. Can be mixed ahead by combining dry ingredients beforehand.
