Preparation
- Preheat the oven to 350°F (175°C).
- Grease a 9x13-inch baking dish with baking spray.
- In a large mixing bowl, combine flour, oats, baking soda, baking powder, and salt. Stir and set aside.
- In a stand mixer, cream together butter and brown sugar on low until smooth, about 2-3 minutes.
- Add eggs, molasses, and vanilla, mixing until blended.
- Gradually add the dry mixture, mixing on low until just combined.
- Fold in 1 1/2 cups of butterscotch chips.
- Press the mixture evenly into the prepared baking dish and sprinkle the remaining 1/2 cup of butterscotch chips on top.
Baking
- Bake for 25-30 minutes until golden brown and a toothpick comes out with a few crumbs.
- Let cool for at least 10 minutes, then drizzle with butterscotch sauce if desired, cut into squares, and serve.
Notes
Store bars in an airtight container for up to 4-5 days. Refrigeration extends shelf life but may change texture. Can be mixed ahead by combining dry ingredients beforehand.
