Ingredients
  

For the tea
  • 3 cups water (warm) Room temperature is fine, slightly warm helps extract color and flavor.
  • 1/2 cup dried butterfly pea flowers Ensure they're quality flowers from a specialty shop.
For sweetening and flavoring
  • 1/3 cup granulated sugar Adjust to taste, honey or agave syrup are great substitutes!
  • 1/3 cup lemon juice Freshly squeezed is best for the most vibrant flavor.
For serving
  • 3 cups ice Use clear ice cubes to enhance presentation.
  • 3 cups soda water Sparkling water or lemon-lime soda can also work.
  • Lemon and rosemary for garnishes Optional for enhancing aesthetics.

Method
 

Prepare the Tea
  1. In a large mixing bowl or glass measuring cup, pour 3 cups of warm water. Gradually add 1/2 cup dried butterfly pea flowers, stirring gently. Let it steep for about 10 minutes until you see a rich blue color.
Strain the Tea
  1. Using a mesh strainer, strain the mixture into a clean pitcher, discarding the flowers.
Sweeten
  1. While the tea is still warm, add 1/3 cup granulated sugar and stir vigorously until fully dissolved.
Combine with Lemon Juice
  1. Pour in 1/3 cup lemon juice to the sweetened tea and stir.
Assemble the Drinks
  1. Fill glasses with ice. Pour the butterfly pea lemonade over the ice, filling each glass halfway.
Top Off
  1. Finish each glass with 3 cups of soda water or lemon-lime soda for fizzy goodness; stir gently to combine.

Notes

For best results, prepare the tea ahead of time but don’t combine it with the soda water until you’re ready to serve to ensure maximum fizz.
