  • 2 cups rotini pasta, cooked al dente and chilled Use whole grain rotini for an extra health kick.
  • 1 cup cooked and shredded chicken breast Substitute with leftovers or rotisserie chicken for convenience.
Vegetables
  • 4 stalks celery, chopped Feel free to mix in your favorites, like sweet bell peppers or corn.
  • 1 cup shredded carrots
Dressings
  • 1/2 cup ranch dressing Hidden Valley is recommended for its robust flavor.
  • 2 tablespoons buffalo sauce Adjust to taste.
  • 2 tablespoons crumbled blue cheese Optional, can be omitted.

Method
 

Preparation
  1. In a small bowl, mix the ranch dressing, crumbled blue cheese, and buffalo sauce. Taste and adjust the heat as desired.
  2. In a large bowl, combine the cooked rotini, shredded chicken, chopped celery, and shredded carrots. Toss to mix.
  3. Pour the buffalo dressing over the salad and toss until everything is evenly coated.
  4. Serve immediately, or cover and refrigerate for a few hours to let flavors meld.

This salad can last in the fridge for up to 3 days. Prepare it ahead for best flavors.
