  • 1 piece egg Room temperature for better mixing.
  • 1 teaspoon vanilla extract A quality extract enhances flavor.
  • 1 teaspoon baking soda Acts as the leavening agent.
  • 1 pinch salt Balances flavors.
  • 1 1/2 cups all-purpose flour Sifted for lightness.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Mix in the sugar, egg, and vanilla extract until well combined.
  5. Sprinkle the baking soda and salt over the mixture and mix in.
  6. Gently fold in the flour until just combined.
  7. Lightly grease a loaf pan with butter or cooking spray.
  8. Pour the batter into the greased pan.
Baking
  1. Bake in the preheated oven for 60-65 minutes until a toothpick comes out clean.
  2. Let the bread cool in the pan for a few minutes, then transfer to a wire rack.

Notes

Store at room temperature in an airtight container for up to 2 days; refrigerate for a week; freeze for 3 months. For a nutty flavor, consider using whole wheat flour.
