- Add the fresh mint leaves and simple syrup to a cocktail shaker. Gently muddle for about 10-15 seconds to release the aromatic oils.
- Pour in lime juice, light rum, and apple cider. Toss in a handful of crushed ice.
- Secure the lid on your shaker and shake vigorously for about 15 seconds until well chilled.
- Fill two highball glasses with crushed ice.
- Strain the cocktail mixture over the crushed ice, filling the glasses about three-quarters full. Top with club soda.
- Garnish each glass with sliced apples and a few extra mint leaves.
- Serve immediately and enjoy your homemade Apple Cider Mojito!
Notes
Avoid over-muddling the mint to prevent bitterness. Use chilled rum for enhanced refreshment. You can make a non-alcoholic version by omitting the rum.
