  • 2 ounces light rum A quality light rum enhances the flavor; Bacardi is recommended.
  • 2 ounces apple cider Opt for unfiltered, fresh apple cider for the best taste.
  • crushed ice Adds texture and chills the drink.
  • club soda To top off the drink for that fizzy finish.
  • apples, sliced for garnish Choose sweet varieties like Fuji or Honeycrisp.

Preparation
  1. Add the fresh mint leaves and simple syrup to a cocktail shaker. Gently muddle for about 10-15 seconds to release the aromatic oils.
  2. Pour in lime juice, light rum, and apple cider. Toss in a handful of crushed ice.
  3. Secure the lid on your shaker and shake vigorously for about 15 seconds until well chilled.
  4. Fill two highball glasses with crushed ice.
  5. Strain the cocktail mixture over the crushed ice, filling the glasses about three-quarters full. Top with club soda.
  6. Garnish each glass with sliced apples and a few extra mint leaves.
  7. Serve immediately and enjoy your homemade Apple Cider Mojito!

Notes

Avoid over-muddling the mint to prevent bitterness. Use chilled rum for enhanced refreshment. You can make a non-alcoholic version by omitting the rum.
